Ingredients needed

  • 2 pt ice cream (690 g)
  • 11 oz pound cake, 2 loaves (310 g)
  • 1 cup all-purpose flour (125 g)
  • 1 egg
  • 1 cup cold water (240 g)
  • oil, for frying

How to make Tempura Ice Cream step by step

  1. Scoop 6 ice cream balls onto a baking sheet lined with parchment paper and freeze for at least an hour, or until hard.
  2. Pound cake should be cut into 1-2 inch (2 12-5 cm) slices.
  3. Place three pieces of pound cake side by side on plastic wrap and flatten with a rolling pin.
  4. Wrap the frozen ice cream ball completely in pound cake. Freeze for an hour or more, or until firm.
  5. Mix flour, egg, and water a bit at a time to make tempura batter.
  6. Preheat the oil to 400 degrees Fahrenheit (200 degrees Celsius).
  7. Wrap the ice cream in tempura batter and fry it.
  8. Carefully lower the covered ice cream into the oil and cook for 15-30 seconds, or until golden brown. If you cook the ice cream for too long, it will melt.
  9. Wipe away any excess oil using a paper towel.
  10. Serve immediately with your preferred toppings.

Note: Add some chocolate and raspberries for extra taste and decoration. I recommend freezing the ice cream for 30 minutes longer than the directions.

Don’t roll out the pound cake too much because then it will crumble.

You can as well add frosted flakes to make a more crunchier result.
