How to make papas a la Mexicana at home. Cook the potatoes until they are cooked through, turning constantly, for a few minutes. Add the onion and sauté until it is translucent.
Cook for another 2 minutes, stirring regularly, after adding the Serrano or Jalapeo pepper. Mix in the diced tomato, salt to taste, and the potato mixture, and cook until you’re happy with the results.

This meal is great for breakfast, as a side dish for dinner, or as a meatless taco filling. Because of their rich taste and medium spice, I prefer to use roasted poblano peppers. Depending on your preferences, the green chiles used in this meal can be changed.

- 2 tablespoons margarine with salt or vegetable oil
- 2 cups potatoes, peeled and diced
- 1/3 cup diced white onion
- 1 serrano pepper, problano pepper or jalapeño pepper, sliced
- 2 diced tomatoes
- pepper to taste

2 to 3 finely chopped fresh jalapeos can be substituted for the roasted poblano pepper for a hotter meal. Alternatively, 2 diced green bell peppers can be used if you like something milder.
Papas a la Mexicana recipe step by step
- Melt the margarine or vegetable oil in a large skillet over medium-high heat.
- Add the diced potatoes to the pan once the butter has melted and the pan is hot, and cook for 8-10 minutes, tossing frequently to keep them from burning.
- Cook for 3 minutes, or until the onion is transparent, stirring periodically.
- Cook for another 2 minutes, stirring occasionally, with the serrano or jalapeo pepper.
- Cook for 2 minutes after adding the sliced tomato, seasoning with pepper and gently folding it in with the potatoes, onion, and chilies.
- We’re ready to eat with warm tortillas and beans, or with cilantro and crumbled Queso Fresco. Enjoy!
