If you’re still unsure about how to cook it or whether it’s worth the time, keep reading and I will answer all your questions!

Godorniz is a delightful food that combines the crispy, delicious goodness of bacon with the fresh, grassy taste of quail.

Godorniz is definitely not your typical quail dish, but it’s absolutely worth trying out. The bird’s creamy white meat has a nice tenderness to it, and the bacon adds just the right amount of smoky flavor. Plus, you get an extra dose of protein from the bacon in each bite! Here’s how to make bacon-wrap quail.

What is Godorniz?

Quail is the English word for Godorniz. They’re a tasty little bird that can be roasted, broiled, fried, grilled, or sauteed. They have a gamier flavor than chicken, but not to the point of repulsing individuals who aren’t fond of it. Many people identify godorniz with restaurant menus or cooking shows, but making godorniz at home is really simple. Because of their diminutive size, they cook rapidly. If you’re looking for a nice evening meal, they can be on the table in under 30 minutes.

Because they both dwell on the ground, quail and chicken have a similar flavor profile. Quail, on the other hand, is much more delicious and tender than chicken. The flavor of quail is like a combination between duck and chicken.

Cooking is possible with quails, pheasants, hazel grouses, and partridges. Despite the simplicity of the recipe, the taste and presentation are really festive. Wrap the chicken breasts in thin pieces of bacon to avoid them from drying out. The meat will stay juicier and the breasts will not dry out as much. I use small shallots, which are similar in size to garlic greens, for godorniz.

They have a similar structure and color to chicken, but you’ll probably want two for each person if you serve them as a main course. Serve them alongside a warm grain salad and roasted grapes. Make a little Thanksgiving lunch with mashed potatoes, cornbread dressing, and a delicious tart cranberry sauce. Cooking quail in sage and butter and serving with glazed carrots is another alternative.

Godorniz are offered fresh or frozen, bone-in or bone-out. Choose plump birds with a healthy pink tinge to their creamy golden skin. The skin should be moisturized but not dripping wet. It’s best if they have a neutral odor. Ignore quails that are gray in color or have an unpleasant odor.

  • 1 lb black pepper bacon, divided use
  • 1 pkg. frozen quail breasts, thawed and breasts split
  • 1 teaspoon kosher salt
  • 1/2 cup(s) Artisan Cheddar Cheese, shredded
  • 1/4 cup(s) shallots, minced
  • 1 tablespoon garlic, minced
  • 1/4 cup(s) bourbon, optional
  • 2 tablespoon maple syrup
  • 2 tablespoon Dijon mustard
  • 3 tablespoon apple cider vinegar
  • 2 tablespoon salted butter

Godorniz recipe step by step

  1. Preheat the oven to 450 degrees Fahrenheit, or the grill to medium-high if you’re grilling.
  2. 7 bacon pieces should be divided in half and 1 jalapeo should be split into 14 strips.
  3. Salt and pepper each quail breast, then top with 1 jalapeo strip and shredded cheese. Wrap the bacon around the entire breast after folding it in half. Secure the skewer or toothpick with a skewer or toothpick. Wrap the breasts until they are completely covered.
  4. On a preheated baking sheet, bake or grill for 20 minutes.
  5. Meanwhile, dice 4 to 5 pieces of uncooked bacon in a pan over medium-high heat.
  6. Allow the fat to render and the bacon to crisp up for a few minutes.
  7. Finely slice the remaining jalapeo, as well as the shallots and garlic, into the bacon. Cook, stirring occasionally, for 2 minutes.
  8. Pour in the bourbon and, using a stick lighter, carefully ignite it on fire to cook out the alcohol.
  9. When the alcohol has evaporated, add the maple syrup, mustard, and apple cider vinegar. Bring to a low boil for 1 minute, then remove from the heat and quickly stir in the butter.
  10. In a small bowl, serve the sauce alongside the quail. As a garnish, serve with lemon wedges and onion rings.
