Ingredients needed for Hawaiian Roll Sushi

  • 250g sushi rice
  • 2 tbsp rice wine vinegar
  • 1 tsp caster sugar
  • 1 pack of Organic Tofu, drained (keep the marinade) and sliced lengthways
  • 1 avocado, sliced lengthways
  • ¼ pineapple, sliced lengthways
  • 1 red chilli, deseeded
  • 1-2 spring onions
  • 1 carrot, sliced very thinly
  • 2 tbsp desiccated coconut
  • 4 sheets of nori seaweed
  • ½ mango, diced
  • 1 spring onion, finely sliced
  • 1 red chilli, deseeded and finely sliced
  • 1 tbsp chopped mint/coriander
  • ½ lime, juiced
  • Cauldron sweet ginger tofu marinade
  • 2 tbsp yuzu juice
  • 1 tsp soy sauce

How to make Hawaiian Roll Sushi step by step

  1. Wash your rice and then soak for 30 minutes.
  2. Brush tofu, pineapple, and avocado with oil and griddle for 5 minutes on each side or until browned, set aside.
  3. Toast coconut in a dry pan over medium heat until golden.
  4. Drain the soaked rice.
  5. In a saucepan, cover the rice with 390ml fresh water, bringing to a boil over high heat while being careful not to remove the lid.
  6. Reduce heat and simmer for 15 minutes, then remove from heat and leave to steam for 15 minutes with the lid on.
  7. Next, finely chop the mango, chilli, spring onion, and herbs and toss with lime juice.
  8. Set aside the tofu marinade, yuzu juice, and soy sauce.
  9. Combine rice wine vinegar and sugar in a mixing bowl, then carefully stir through cooked rice with a wooden paddle/spoon.
  10. Wrap the bamboo sushi mat in cling film, then wet your hands and the film with a damp cloth and press the rice into a 1cm thick rectangle on top.
  11. Place the nori sheet over the rice and shape it to fit beneath, leaving at least 2cm of rice above the nori at the top edge.
  12. Lay the tofu, pineapple, avocado, chillies, spring onions, and carrots horizontally 2cm from the bottom edge of the nori, reserving some for topping.
  13. Lift the bottom edge of the mat with your thumbs and roll it up and over the filling, making sure that the cling film and mat are not tucked in.
  14. Roll the sushi to tighten it, then remove the film and top with the remaining tofu, avocado, and pineapple before slicing with a sharp wet knife and serving with toasted coconut, mango salsa, and dipping sauce.
