- 3 lbs pork ribs
- 8 Chile Guajillo or California
- 1/8 tablespoon cumin
- 1/3 cup water
- 2 garlic clove
Costillas de Puerco Recipe
- Rinse your pork ribs and use a sharp knife to cut between the bones.
- Cover your spare pork ribs in a skillet or saucepan and heat over medium heat.
- Season with salt and pepper to taste (this is where they will absorb the flavor) and the 1/8 tablespoon cumin when they begin to release their natural juices, cover, and allow to dry on its own.
- The natural grease will begin to release, and you'll need to stir them occasionally for a few minutes to allow them to stir fry. Cook until the edges are golden brown and crunchy.
- Boil water, then add your 8-10 guajillo or California chilies, along with the same water, salt, and 1 garlic clove, and blend until well combined.
- Pour evenly over your spare ribs (strain the Chiles mixture if you don't like the pieces on it).
- Cook for another 10 minutes on low heat, covered.
- Serve immediately with a green salad and Spanish rice.
