Atol de Elote is a traditional Mesoamerican beverage. It comes hot and will warm your heart. The atole is easy to make, but it takes time and patience. But in the end, you'll have made something delicious that was well worth the effort!
The original Mesoamerican recipe calls for young white corn on the husk. Because that type of corn can be difficult to find, you may prefer to make your recipe with organic yellow corn, which is much easier to find. The traditional recipe does not include cornstarch, but I discovered that adding a few tablespoons gives the atole a richer consistency, which improves the flavor.
