  • 1/3 cup diced white onion
  • 1 serrano pepper, problano pepper or jalapeño pepper, sliced
  • 2 diced tomatoes

2 to 3 finely chopped fresh jalapeos can be substituted for the roasted poblano pepper for a hotter meal. Alternatively, 2 diced green bell peppers can be used if you like something milder.

Papas a la Mexicana recipe step by step

  1. Melt the margarine or vegetable oil in a large skillet over medium-high heat.
  2. Add the diced potatoes to the pan once the butter has melted and the pan is hot, and cook for 8-10 minutes, tossing frequently to keep them from burning.
  3. Cook for 3 minutes, or until the onion is transparent, stirring periodically.
  4. Cook for another 2 minutes, stirring occasionally, with the serrano or jalapeo pepper.
  5. Cook for 2 minutes after adding the sliced tomato, seasoning with pepper and gently folding it in with the potatoes, onion, and chilies.
  6. We're ready to eat with warm tortillas and beans, or with cilantro and crumbled Queso Fresco. Enjoy!
