Atol de elote Ingredients
- 6 cobs corn, cooked
- 2¼ cups hot water
- 2 cups milk (boiled)
- ½ cup water (cold)
- ¾ cup sugar
- ½ teaspoon salt
- 3 teaspoons cornstarch
- 1 teaspoon ground cinnamon
- 1 stick cinnamon (optional)
Atol de elote Recipe
- To extract the kernels, cut the cob down the length with a sharp knife.
- In a blender, puree the remaining corn kernels.
- Strain the corn purée through a sieve into a large saucepan, discarding any firm pieces that remain in the colander.
- In a mixing bowl, combine the sugar and salt.
- Over medium to high heat, bring the heating milk and water to a boil, stirring constantly.
- Reduce the heat to low, cover, and set aside for 5 minutes, or until the sauce has thickened slightly.
- Pour the cornstarch mixture and 12 cup (100 mL) cold water into the simmering liquid. Whisk the mixture until it is smooth and creamy.
- Pour the hot atol into cups or bowls and sprinkle with cinnamon. Serve immediately with a few freshly prepared corn kernels.
