Tamales Colombianos are a typical Colombian dish prepared with maize flour and freshly ground corn wrapped in a corn husk. In most cases, the tamale is steamed or cooked in boiling water. Tamales are a Colombian tradition that are eaten similarly to omelets in Spain.

Tamales Colombianos ingredients
    Marinade
  • ½ white onion
  • 4 green onions, stalks only
  • 5 garlic cloves
  • 4 tbsp food coloring/all-purpose seasoning (Triguisar, Sazón Goya or
  • homemade )
  • 3 cups (720 ml) water
  • Salt and pepper to taste
  • Guiso
  • 2 tbsp olive oil
  • ½ white onion, finely chopped
  • 4 green onions, stalks only, finely chopped
  • 2 garlic cloves, finely chopped
  • ½ red bell pepper, finely chopped
  • 4 tomatoes without seeds, finely chopped
  • 1 tsp food coloring/all-purpose seasoning (Triguisar, Sazón Goya or homemade )
  • 1 chicken bouillon
  • Salt and pepper to taste
  • ½-1 (120-240 ml) cup water
  • Filling
  • 1 lb pork belly, cut into 15 pieces
  • 15 small pork ribs
  • 15 chicken pieces (drumsticks, thighs, breasts, wings)
  • 4 medium red potatoes peeled, cut into slices and soaked in water with salt and color
  • 3 medium carrots peeled, cut into slices and soaked in water with salt and color
  • 15 sprigs Italian parsley
  • 2 cups (16 oz) cooked chick peas (I usually use one can)
  • 1 lb Colombian longaniza, Colombian chorizo or kielbasa cut into 15 pieces
  • Masa
  • 8 cups (1.89 liters) water
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 chicken bouillon
  • 1 tbsp food coloring/all-purpose seasoning (Triguisar, Sazón Goya or homemade )
  • Salt to taste
  • 1½ lb pre-cooked white corn meal
  • 1 cup (150 g) frozen or raw sweet peas
  • Wrappings
  • 3-4 16 oz bags frozen banana leaves
  • Butcher string Marinade

How to make Tamales Colombianos

  1. Combine all of the marinade ingredients the night before in a blender or food processor.
  2. In large resealable plastic bags or large plastic bowls, combine the pork belly, pork ribs, and chicken pieces with the marinade. Cover and refrigerate overnight.
  3. If you're using frozen banana leaves, thaw them in the refrigerator overnight.
  4. Remove the banana leaves from the sack the next day and cut them into 20-inch-long rectangles (50 cm).
  5. Clean both sides of each leaf with a damp cloth or paper towel. If the leaves are stiff and fresh, pass them over a low or medium low stove heat for a few seconds to soften them.
  6. Before placing the potatoes in a medium dish of water, peel them and cut them into thick slices. Season the water to taste with salt and all-purpose spices, if preferred.
  7. Before placing carrots in water in a small container, they should be peeled and sliced into slices. Season the water with salt to taste if desired.
  8. Follow these procedures to make the guiso, or seasoned sauce: In a large skillet over medium heat, heat the olive oil, then add the onion and cook for 3-5 minutes, or until translucent. After adding the green onions and garlic, cook for another 1-2 minutes. Reduce the heat to low and simmer for 8-10 minutes, or until the red bell pepper and tomatoes are soft.
  9. In a large mixing bowl, combine the all-purpose seasoning, chicken bouillon, salt, and pepper. Stir thoroughly and add 1 to 2 cups of water to thin it down.
  10. Follow these steps to make masa (dough): Combine the masa water, onion powder, garlic powder, chicken bouillon, all-purpose seasoning, and salt in a large pot. Heat the water on the stovetop without bringing it to a boil. Then, working continually with a spatula or a wooden spoon, gradually add the pre-cooked corn meal until it resembles thick oatmeal. If the masa becomes too dry, add extra water. Remove the masa from the heat and thoroughly toss in the peas.
  11. Place two banana leaves (or more if needed) in a cross shape on top of each other to make the tamales. Make sure the grooved or veined side of the underside is facing up and the smooth side is facing down.
  12. Spread around 14-12 cup masa on the leaf using a spoon.
  13. 1 tablespoon guiso on top of masa
  14. Put a sprig of parsley on top of the guiso.
  15. In the masa, insert two potato slices and two carrot slices.
  16. Add 3–4 tablespoons chickpeas to the mix.
  17. Place 1 piece of longaniza, 1 pork rib, 1 piece of pork belly, and 1 piece of chicken on top of the masa. If desired, you can top it with more masa.
  18. Tuck the leaf's sides into the middle and fold the top and bottom sides in to form a package to close the tamal. To keep things together, butcher string should be utilized. Carry on with the process with each tamal.
  19. To make the tamales, fill 14 of a large pot (tamalera) with water and season with salt. Set a steam rack inside the pot and bring the water to a boil to protect the tamales from touching the bottom of the water. You can load the pot with sticks, small rocks, or discarded banana leaves if you don't have a steam rack.
  20. Place the tamales on the steam rack one on top of the other and steam for 2 hours on low heat. To prevent the water from totally evaporating, check the level every 30 minutes.
  21. Before serving, remove the tamales from the oven and put them aside for a few minutes.
