Ingredients needed

  • 2 tablespoons olive oil
  • 1 large shallot, finely chopped (about 1/4 cup)

  • 2 cups arborio rice
  • 1 cup dry white wine

How to make Risoto step by step

  1. Reheat the chicken stock in a medium saucepan over medium-low heat, cover, and keep warm while making the risotto.
  2. Heat the olive oil in a separate medium saucepan over medium heat until it shimmers. Cook, turning occasionally, for 3 to 4 minutes, or until the vegetables are softened, with the shallot, garlic, 1/2 teaspoon salt, and about 10 grinds black pepper. For about 1 minute, or until the butter has melted, stir in the bay leaves and 3 tablespoons butter.
  3. Toast the rice for 3 to 4 minutes, stirring once, until it smells nutty and turns a light golden brown color.
  4. Cook, stirring frequently, for 2 to 3 minutes, or until the wine has completely evaporated.
  5. 2 to 3 minutes (when you move the rice aside and no liquid pools in the center, it's time to add more stock). Pour in one cup of the warm stock and cook, stirring gently but constantly, until the rice has absorbed the liquid.
  6. Repeat until the rice is al dente, about 17 to 19 minutes, adding a ladleful of stock at a time. Remove the bay leaves and discard them. (Perhaps you have some extra stock.) If this is the case, keep it refrigerated in an airtight container for up to a week.) If you prefer a saucier risotto, add 1/4 cup of stock at a time until you reach the desired consistency.
  7. If desired, top with more Parmesan, the remaining 2 tablespoons butter, 1 teaspoon salt, and a few more grinds of black pepper.
