- 1/4 teaspoon salt
- 1/4 teaspoon Black Pepper
- 2 tablespoons cooking oil
- 2 1/2 cups water

- In a medium skillet with 2 Tablespoons cooking oil, toast the peppers (ancho and cascabel) until golden crispy. Turn off the heat and set the pan aside.
- In a blender, combine the garlic, cumin, salt, black pepper, roasted peppers, and tomato puree. Continue for 3 minutes on medium, then add 2 1/2 cups water and blend for a few more minutes - set aside.
- Heat the oil in a skillet, then transfer the salsa to a blender. Stir in the spices and cook for 15 minutes to allow them to absorb the sauce. Take it out of the equation.
- To soften tortillas, lay them in a hot skillet with 1 1/2 cup oil one at a time. Until all of the tortillas are done, dip them in the oil first, then in the Ancho Sauce.
- With the queso and onion mixture inside, roll each tortilla into an enchilada. Serve 2 or 3 enchiladas on a dish with a side of queso and chopped onion.
