- 1kg lamb, pork, beef, or chicken
- 4 clove of garlic, peeled
- 1 white onion or spring onion
- lemon juice and a little of its zest
- 1 tablespoon hot paprika
- 2 1/2 tablespoons sweet paprika
- 1 tablespoon cumin grain
- 4 saffron (strands)
- black pepper, ground
- 1 pinch cinnamon 1, ground
- 1 bunch fresh cilantro (or parsley)
- salt, to taste
- extra virgin olive oil
- Meat should be chopped into 2-3 cm cubes already. Dry it with kitchen paper.
- Clean the coriander and lemon before using.
- Peeled garlic and onion should be finely minced.
- In a food processor, combine these ingredients with the lemon juice and a portion of the zest, as well as the coriander leaves.
- Combine the spices, salt, and oil in a blender until a paste forms, but not all of the spices are diluted. If you don't have a food processor, combine the cumin and saffron in a pestle and set aside the garlic; if you don't have one, thinly slice the onion and coriander with a knife.
- In a large zip lock freezer bag, pour the marinade over the meat. If the sauce is too thick, add extra oil. Close the container tightly and massage the meat to equally permeate it with the liquid while releasing as much air as possible. Refrigerate for at least 8 hours and up to 12 hours before serving.
- Before grilling, prepare the skewers with wooden or metal skewers. Cook on a very hot griddle, flipping them over, until beautifully browned. Before cooking on the grill or over an open fire, soak the wooden skewers in water for half an hour.
